I spent a number of years working in Albuquerque, and every December, I cannot help but be reminded of piping hot bowls of New Mexican “pozole,” a stew traditionally made made from hominy, pork, and dried red chiles. As often as I tried, I could never come close to making a pozole as delicious as my friend’s wife, Rosie’s.
